The best way to feel this perfect harmony is at the same time the simplest: taste it directly with a teaspoon!
Use
It is essential to remember that Traditional Balsamic Vinegar (ABTM) is not an ingredient but a condiment! Ingredients are used in the kitchen while preparing meals, while condiments are used directly on the table according to each person's preference.
It is therefore advisable to follow the procedure below:
- First, taste ABTM by pouring some drops of it on a teaspoon
- Then, taste the prepared dish on its own
- Finally, decide based on your personal taste, WHETHER to add ABTM, WHICH ONE of the two different types, and HOW MUCH to use.
Suggested Pairings
Although there are no fixed rules for the pairings, since ABTM is a traditional product it pairs exquisitely with dishes and typical Italian food.
These are our suggestions:
- ABTM DOP, aged for at least 12 years, pairs really well with products that tend to be fatter, such as cotechino, zampone, bollito misto, etc. Compared to ABTM over 25 years, its slightly higher acidity helps to "clean" the mouth during the meal.
- ABTM DOP “Extravecchio”, over 25 years of aging, is best paired with delicate and simple dishes, such as omelettes, cheeses, fruit, ice cream, etc.
How to dress a salad
First, take a spoon, add salt and ABTM DOP and mix them together on the spoon until the salt dissolves. Then, pour the spoon over the salad and mix well.
Only at this point, add the oil. It is essential to follow this order to have a perfectly dressed salad.
If the oil were added before that, it would cover the leafs of the salad, and when the ABTM is added it would slide on the leaf and then settle at the bottom of the plate.
How to store it
Since ancient times, vinegar has also been used as a preservative and ABTM DOP is no exception.
It does not need special attention: just make sure to close the container diligently (it is not necessary to "seal it") and keep it at room temperature.
