Traditional Balsamic Vinegar of Modena PDO is obtained from only one starting material, cooked fermented and acetified grape must. Through a very long aging in series of barrels of different woods, the must is fermented, then acetified and progressively gets more concentrated as time goes by.
With its dark brown shiny colour, it has a distinctive flowing syrupy texture, and a characteristic and complex perfume, with a clear but pleasant note of harmonic acidity.
Traditional Balsamic Vinegar has a traditional and unique flavor, with a good balance of sweet and sour, tasty with velvety nuances. Supplied in its unique bottle, which complies with legal requirements, it is available in two different agings: aged at least 12 years with an ivory label, aged over 25 years with a gold label.
